Is there a way to make the scalloped potatoes so that half of the pan has cheese in it and half has cheese with the lactose removed or should the recipe be cut in half with the pans marked accordingly.. Are there ideas for making substitutions for cheese if a family member does not eat cheese?

I saw the clip and immediately wanted to fix this dinner! As he said, "Fix it and they'll come!"
What was the gadget he used to slice the potatoes?
