This looks awesome! However, I do have one perhaps silly question as I have never cooked a turkey before. I am quite a capable cook, but never had the urge to do so. Anyway, how would you go about putting the butter under the skin without pulling it all off? Will it be easier than I think once I get to doing it? Thanks!

I used Gordon's recipe for upside down turkey, and got a perfect, tender, tasty bird, perhaps the best and easiest I've ever done. I like bread stuffing with my turkey even though I don't actually stuff the bird. I made a pan of cornbread with a 1/2 cup of canned pumpkin added to the batter. When cornbread was cooled, I cut it into cubes and crumbs and added thyme,sage, & rosemary, and sauteed celery and onions. I moistened with chicken broth, and baked in a preheated pan along with the turkey for about 25 minutes. The last 5 minutes, I uncovered the pan to let the top of stuffing form a slight crust.

I had no problem printing. The recipe opens in Adobe (if you get don't, maybe that is the problem.) Then make sure you click the print icon (not "File, then print) and wait for a few minutes, maybe two, or three. Everything is there! Lovely turkey recipe.
