Saw this demonstrated twice and i have got to try it!!! told my son about it and am thinking about it today at work so i had to print it out and make sure i make it for this week-end!! will let you know how it comes out!!

Are there any high altitude changes recommended? I live in Utah at 4600 ft and I've heard that altitude can be an issue when trying to make a souffle. Thanks!

Thanks for the question Jeanette! From Gordon: "Yes -- you have to be careful to cook the spinach, then dry it, and then chop it -- but it should work. And make sure the spinach doesn't have any stems."

Your recipes are wonderfully pleasing to the taste and the eye. I print everything you have on this site. Thank you very much for sharing your 'secrets'. How have you learned to cook like this ? By the way, I am having a hard time losing weight ! hahahahah.
